2.3.2 Analysis of the Influence of Temperature on the Viscosity of Compound Beverage
The relationship between viscosity and shear rate at each temperature gradient is shown in Figure 6. The viscosity decreases with the increase of shear rate at each temperature gradient, and then tends to be stable. As can be seen from Figure 7, the viscosity of the composite beverage decreases with the increase of shearing time, and then tends to be stable. With the increase of temperature, the viscosity of compound beverage shows a downward trend, because the increase of temperature has a certain destructive effect on the stable system formed by colloid in compound beverage, and the viscosity decreases (23).
By controlling the temperature, the viscosity of the compound beverage can be adjusted, so that the compound beverage has stable fluidity in the production process and the product quality can be better controlled [24].
