I suggest you choose Siemens S7-200. You need more theoretical basis to choose S7-300/400, AB and other large and medium-sized PLCs than other PLCs. As a teacher, the most important thing is to let children learn something. They won't learn things that are too difficult to start with. This is a waste, so choosing a simple and easy-to-learn PLC will make them more acceptable.
