Pork is the most important material, so it is suggested to choose lean meat, which will make the meat floss taste better. In addition, the proportion of salt, sugar, soy sauce, cooking wine, spiced powder and pepper powder can be adjusted according to personal taste.
Production steps
The production steps of Taicang meat floss are as follows:
1. Cut the meat
Slice the pork with a thickness of about 0.3-0.5 mm, and pay attention to the direction of the knife edge when cutting the meat, so as not to affect the taste.
pickle
Put the chopped pork into a large bowl, add appropriate amount of salt, sugar, soy sauce, cooking wine, spiced powder and pepper powder, and stir well. Then cover the bowl with plastic wrap and marinate it in the refrigerator overnight.
toast
Put the marinated meat slices on the baking tray and bake them in the oven. It is suggested that the oven temperature should be controlled at about 150 degrees for about 30-40 minutes. When baking, keep turning the meat slices to avoid burning or undercooking.
pestle
Put the roasted meat slices into a meat grinder and mince them into fluffy meat. If there is no meat grinder, you can also cut the meat slices into filaments with a knife and rub them into fluffy meat by hand.
dry
Put the minced meat floss on the baking tray and put it in the oven to dry. It is suggested that the drying temperature should be controlled at about 100℃ and the drying time should be about 1-2 hours. Turn the floss continuously when it is dry to avoid burning.
Edible method
The made Taicang floss can be eaten directly, and can also be used to make other dishes. For example, Taicang floss can be sprinkled on rice, or made into snacks such as floss bread and biscuits. Whether it is eaten directly or made into other dishes, it is very delicious.
