In fact, when it comes to pasta, the most important thing is the soup head, so the beauty of Satay's noodles is also the soup head. Generally, fresh pig bones, whole chicken and fish heads are used to make a delicious and mellow soup, and an important raw material: sand tea sauce is added. I don't know how to describe the taste. Boiled soup and noodle soup will be covered with red oil. When drinking, don't eat the red oil together. The soup is fresh and thick, and the taste is spicy and rich. The soup in the pot is always boiling. When guests come, they will cook noodles (noodles are the unique oily noodles in southern Fujian, also called raw noodles, which are golden and elastic in color) and vegetables with boiling water, remove them and put them in bowls; Then pour in the thick sand tea soup while it is hot.
