Practice of mutton pickled pepper in Xi' an basin
Method for making mutton spicy oil in water basin

Material: dried pepper 10g.

Accessories: pepper 1g, white sesame 5g, peanut 5g, soybean oil 100ml.

Seasoning: salt 1g, 2 drops of vinegar.

Steps:

1. Slice the dried pepper with scissors, add pepper, press it into the final shape with a blender, and put it in a porcelain bowl.

2. Pour white sesame seeds and cooked peanuts into it, salt 1g, and stir well (peeled white sesame seeds will be cooked with hot oil later).

3. Put oil in the pot and heat the oil.

You can use chopsticks to test the oil temperature. When the oil temperature rises and the air is full of oil fume, turn off the fire.

5. Pour it on the prepared pepper powder (at this time, it will make a lot of noise, smell full, you can't leave for a long time, and the oil is covered with small bubbles).

6. Pour two more drops of vinegar.
