Basic principles of bean sprout production.
Bean sprouts are the products of germination of seeds of leguminous plants after soaking in water, and the common ones are mung bean sprouts and soybean sprouts. Bean sprout is rich in vitamin C, dietary fiber and plant protein, and it is a healthy vegetable. The production of bean sprouts does not need land and farm tools, but only needs sufficient water, temperature and ventilation to germinate indoors.
2. Matters needing attention in bean sprout production
Choose high-quality seeds and don't use expired, deteriorated or preservative-added seeds. Keep the production environment clean and ventilated to avoid pollution and mildew. To control the water temperature and quantity, don't let the water stagnate or lack. Avoid direct sunlight, otherwise it will affect the color and taste of bean sprouts. Harvest and eat in time, and don't let the bean sprouts grow too long or get old.
3. Steps of bean sprout production
Bean selection: Choose fresh beans, such as mung beans and soybeans, which are harvested in the same year and have large and full seeds, high germination rate and no pests and diseases. Remove impurities, broken beans, cracked beans and other bad beans. Soaking beans: rinse the sterilized beans with clean water, and then soak them in warm water until the beans burst. Pay attention to changing water and stirring when soaking beans to keep the water clean.
Accelerating germination: put the soaked beans into a container that is breathable, leak-proof and dark, such as wooden bucket, plastic bucket and bamboo basket. The thickness is not more than one layer, and the surface is covered with wet cloth or sack. Keep the room temperature at about 22 ~ 25℃, rinse it with clear water for more than 2 times a day, and keep it moist. Generally speaking, mung beans need to germinate for 3 to 5 days, and soybeans need to germinate for 5 to 7 days.
Harvest: when the bean sprouts grow to about 8 ~ 10 cm, the stems are tender and the heads are small and round, they can be harvested. Rinse with clear water before harvesting to remove roots and skins. After harvesting, it should be eaten in time or stored in cold storage.
Bean sprouts can be made into cooking, soup, cold salad, snacks and other dishes.

You can fry mung bean sprouts or soybean sprouts with other vegetables or meat, such as fried shredded chicken and silver seedlings, fried shredded pork bean sprouts and fried leek bean sprouts.

You can mix mung bean sprouts or soybean sprouts with other seasonings, such as cold bean sprouts, hot and sour bean sprouts and coriander bean sprouts.

Mung bean sprouts or soybean sprouts can be made into snacks together with other ingredients, such as bean sprouts cakes, bean sprouts rolls, bean sprouts stuffed with jiaozi and so on.
