Basic principles of bean sprout production.

Bean selection: Choose fresh beans, such as mung beans and soybeans, which are harvested in the same year and have large and full seeds, high germination rate and no pests and diseases. Remove impurities, broken beans, cracked beans and other bad beans. Soaking beans: rinse the sterilized beans with clean water, and then soak them in warm water until the beans burst. Pay attention to changing water and stirring when soaking beans to keep the water clean.

Accelerating germination: put the soaked beans into a container that is breathable, leak-proof and dark, such as wooden bucket, plastic bucket and bamboo basket. The thickness is not more than one layer, and the surface is covered with wet cloth or sack. Keep the room temperature at about 22 ~ 25℃, rinse it with clear water for more than 2 times a day, and keep it moist. Generally speaking, mung beans need to germinate for 3 to 5 days, and soybeans need to germinate for 5 to 7 days.

Harvest: when the bean sprouts grow to about 8 ~ 10 cm, the stems are tender and the heads are small and round, they can be harvested. Rinse with clear water before harvesting to remove roots and skins. After harvesting, it should be eaten in time or stored in cold storage.
