Step 1: The rabbit has been killed, but it hasn't been skinned and depilated yet. First, burn rabbit hair with gas, then scrape off the residual hair with a knife, rinse it clean, gut it, take out the internal organs and wash it again for use.
Step 2: Drain the washed rabbit without peeling, cut some holes in the whole rabbit directly, and smear the whole rabbit with cooking wine, onion, ginger and minced garlic, and of course, smear it inside. Standing and curing 1 hour or more.
Step 3: first put the salted rabbit in the oven to dry the water vapor, then bake it slowly with a small fire, turning it over while baking, and remember to brush the oil halfway.
Step 4: When the rabbit meat is almost cooked, brush it with a layer of oil, sprinkle with Chili noodles and thirteen spices, and then sprinkle with chopped green onion. Bake for a few minutes and you can eat it.
