02 scope of receiving manuscripts

This magazine provides a unique place for physicists, chemists, biochemists, nutritionists and other food scientists to publish papers on the chemistry, physics and biology of food. The magazine focuses on food and its health-related functions, such as description: physical properties and structure of food, chemistry of food ingredients, biochemical and physiological functions of food ingredients, nutritional aspects of food, toxicological reactions to food ingredients, clinical and population studies using food or food ingredients.

Topics of special interest include: chemistry and physics in food digestion, the relationship between the physical properties/structure of food and nutrition and health-such as the release and absorption of nutrients, the molecular characteristics and physiological effects of food ingredients (new ingredients, food substitutes, phytochemicals, bioactive substances, allergens, flavoring agents and spices), the efficacy and mechanism of bioactive substances in human body-including biomarkers, the effects of food pollutants-including toxicology and metabolism, and nutrition.

The following types of articles are not included in the draft: pure food analysis-pure controlled release of compounds or bioactive substances that can be published in our sister journal Analytical Methods and are not within the scope of food research-is more suitable for pharmaceutical journals, in vitro studies of unclear extracts and uncontrolled studies.
