Production technology of Langjiu
Among the "Four Treasures" of Langjiu, beautiful scenery, Langquan and Dongbao are all gifts from heaven. Its exquisite brewing technology is the result of generations of Langjiu people's painstaking efforts, constantly summing up the previous experience and bringing forth new ones. The whole brewing process of Langjiu is difficult and tortuous, with three songs and three sighs, meticulous and exquisite, which can be summarized as follows: high-temperature koji-making, two grain-feeding, cold hall accumulation, back sand fermentation, nine steaming, eight fermentation, seven wine-taking, hole-hiding over the years and so on. Among them, the "sand-returning mode" of Langjiu production is incomparable to other Luzhou-flavor liquor producers, and it is also the longest brewing cycle among all liquors.
