Xuyi Lobster is a specialty of Xuyi County, Huai 'an City, Jiangsu Province, and a symbolic product of chinese national geography. Xuyi lobster is a kind of freshwater lobster, also known as crayfish. Generally, it grows and breeds in lakes and ponds in Xuyi, such as Douhu Lake, Hongze Lake, Tian Quan Lake, Maoer Lake, Swan Lake and Baxian Lake. Historical origin

Crayfish is not an exotic species. In recent years, scientists discovered the fossils of crayfish in Xuyi, confirming that crayfish appeared in Xuyi more than 654.38 billion years ago, rather than the rumored alien species.

Crayfish originated in South America and entered China in large quantities in the 18th year of the Republic of China (1929). It was transplanted from Japan to Nanjing, China, and introduced as bait for bullfrog breeding.

Since 1970s, Xuyi has been rich in lobster and other aquatic products. Fishermen in Huaihe River and along the lake mainly make a living by fishing for fish and shrimp. With the increasing market demand, artificial lobster breeding is gradually emerging, and products such as quick-frozen lobster are exported to the United States, the European Union and other countries.
