If you speak well and use Cantonese fluently, you can write in Cantonese skillfully. If you can only speak a little, don't write. If the interviewer asks you, or if he happens to know Cantonese, you may be exposed. Mastering Cantonese is indeed a skill, but if you don't need to use Cantonese at work, you don't need to write it.
