If the storage time is short, you can put the fresh yacon in a plastic bag and keep it in the shade, so it can be kept for about a week.

2. Refrigeration

Fresh yacon is best stored in a refrigerator at 2-9 degrees. After the yacon is completely wrapped in newspaper, it can be kept in the refrigerator for about a month.

It should be noted that yacon cannot be knocked into the latter to create a gap. If the yacon has been cut, it can be wrapped in plastic wrap and put in the refrigerator to prevent the yacon from oxidation and blackening.

Step 3 soak in clean water

If the yacon has been completely peeled, it is best to soak it in clear water, because the sliced yacon will slowly oxidize, so it is best to soak it in cold water as soon as possible, so it can be preserved for about half a day.

4. Yacon, another name for chrysanthemum potato, is called "ten thousand roots" in Sichuan, China. It is a perennial herb of Compositae, native to the Andes in South America.

The inhabitants of the Andes grow this plant as a root vegetable. The tuberous root of Jerusalem artichoke is rich in water and fructooligosaccharides. It tastes sweet and crisp and can also be eaten as fruit. In the market of Taiwan Province Province, vendors sell the tuberous roots of Jerusalem artichoke under the name of "underground fruit" or "Saussurea involucrata". In fact, chrysanthemum potatoes and Saussurea involucrata are two different plants.

Yacon is especially suitable for growing in sandy soil at an altitude of 1000 ~ 2300m. It likes light and moist soil. The growth period is about 200 days and the growth temperature is 20 ~ 30℃. When it is lower than 15℃, it will stagnate, not cold-resistant, and the stem will die when it meets frost.
