Where did the joint life and the Lantern Festival come from?
Yuanxiao, also known as glutinous rice balls and dumplings, is a seasonal food for the Lantern Festival on the fifteenth day of the first lunar month. The Yuanxiao produced by Luoyang Heshengzhan Food Factory is unique in both inside and outside the province because of its exquisite materials and unique technology. Heshengzhan Yuanxiao is made of pure glutinous rice, soaked in clear water for several days, then taken out, washed, dried and ground into glutinous rice flour. Fillers with various flavors are made from rose, osmanthus fragrans, green plum, hawthorn jujube paste and red bean paste. When forming, dip the stuffing in water, pour it into rice flour and knead it round, and repeat it for 3 ~ 4 times. The finished product is white and uniform in size, with 0/8 ~ 20 tablets per 500 g/kloc. When cooking, put boiling water into the pot and cook it with slow fire. After cooking, it is oval, and the silk is constantly torn. It has the reputation of "picking up one and putting down a pile", just like egg yolk. The taste is soft and various flavors are outstanding. Every festival, people regard tasting the Lantern Festival as a kind of enjoyment.

Hesheng Stack, a century-old shop, is one of the two old brands preserved in Luogang (the other is a "really different" hotel).

Speaking of the origin of Hesheng's font size, we have to start with Zhang in Luoyang. The Zhang family comes from Niewan Village on the outskirts of Luoyang. At the end of the Qing Dynasty and the beginning of the Republic of China, the Zhang family lived under one roof for five generations and did business. At that time, there were more than 70 people in the family and more than 700 mu of cultivated land. There are Hesheng Gongyan Store and Hesheng Hengyoufang in the village, and Heshengde Chinese Medicine Shop and Heshengyi Optical Shop in Luoyang.

Heshengdian was founded in the 19th year of Guangxu in the late Qing Dynasty (A.D. 1893). Its predecessor was Luoyang Paper Mill, which Luo Zhang took over from others. In order to imitate the word "Taisheng" of other firms in the Zhang family and the word "stack" of the old store stack, the font size of the food store is set as stack.

Hesheng Bookstore was originally run by Zhang Shuen. 19 16 years, Zhang dingcen (1897- 1967) took over as the shopkeeper. At first, Hopson Station was just an unknown small food store with a brick counter. When going out to spend money, the operating income is only slightly surplus.

After the early years of the Republic of China, this big family gradually declined, and the main members of the family were selfish, grabbing money from the family's various firms in the city and foreign firms that had contacts with them, so that Hesheng Stack almost became an empty shelf and was unsustainable. 192 1 years ago, after several resignations, no one wanted to take over the mess. Later, they separated, and the four of them only got 50 mu of land and an empty yard of 1, except for Hesheng, who was on the verge of bankruptcy, so the whole family had to live with a grandfather.

0, four brothers, when they were teenagers, they were apprentices at Hesheng Station. Later, he succeeded his seventh uncle in charge of the operation. He has deep affection for the shop and is determined to build his lifelong career based on this small shop. After the separation, 0 sold most of the dozens of acres of irrigated land, and the proceeds were used to enrich the funds of Taisheng Stack, thus maintaining the survival of Taisheng Stack. Because food is hand-operated, it is a necessary consumer product in people's daily life, and there is no big profit, but there is no big risk. In addition, the uncle is well managed. After several years of hard work, the store has established a good reputation and its profits have increased year by year.

And Sheng Stark's situation has improved obviously, after buying the property rented by the store. At that time, Heshengzhan was located in the north street of the old city of Luoyang, sitting west to east. The fa? ade is a two-story wooden building with a width of two rooms. The narrow courtyard is divided into front and back rooms, and the back wall is next to today's Laoji Happiness Street. There are two mansions in the front yard, namely the finance room and the reception room. The corridor and two halls are pastry workshops. The backyard is wide, about four rooms wide, and the mansions and sheds on both sides are kitchens and soy sauce workshops; The open space of the hospital is full of vats, which are threshing floors and raw materials for soy sauce. This property originally belonged to a family named Kou in Yushu Garden, North Street, and the annual rent was 500 yuan, which was about half of the annual profit at that time. The local name is Kou, a rich boy. Later, due to the decline of his family, he kept borrowing money from Hesheng Stark and accumulated a lot of debts. In the late 1920s, Kou's family used their house to pay off their debts and sold it to Stack. Saving store rent, increasing profits in previous years, and greatly expanding the room for manoeuvre of Sheng Stack have laid the foundation for its future prosperity. In the later period of War of Resistance against Japanese Aggression, He Shengzhan bought a courtyard in Dao Ji Street (that is, the location of He Shengzhan Food Factory on Zhongzhou Road today) as a sauce garden workshop.

In the middle of the two spacious business halls, there is a high curved glass counter with exquisite snacks and bottles of wine on it. On the ground behind the counter, there is a row of containers filled with all kinds of soy sauce, rice vinegar, noodle sauce, pickles, fermented bean curd, seasoning and bad eggs. On the wall behind the counter, there are two rows of drawers, which contain various kinds of sugar, such as hemp chips, skin candy and inch gold (candy made of maltose, cylindrical and inch long, with white sugar wrapped inside and sesame stuck outside). Glass shelves are installed on the whole wall near the north. In addition to homemade cakes, candy, wine, canned food, ham, seafood, dried vegetables and condiments purchased from other places are also placed on them.

The customers of Hopson Station, except citizens, are mostly rural people from nearby counties. Rural people are the most affordable, and there must be no vacation; At the same time, rural people also attach great importance to their credibility. If you can win their trust, they will ask you for something no matter how far they run. In the stack of peace and prosperity, there are few phenomena of short weight. The best business period of Hesheng Station in a year is "three festivals", namely Dragon Boat Festival, Mid-Autumn Festival and Spring Festival. When making moon cakes in the Mid-Autumn Festival, 2 or 4 pieces are 1 kg, and they are not weighed when they are sold. Some customers don't trust me and want to weigh the scale again, and the result is between 16 and 17 (the old system 16 is equal to one catty). In terms of materials, the shopkeeper never sets limits. The requirement is "how to eat and how to cook" and choose the best raw materials. For example, cakes such as moon cakes, sesame oil, snow-white lard, refined powder and imported sugar should be used, and the best jujube should be chosen as jujube paste. Sesame seeds for making snacks and sugar, soybeans for brewing soy sauce, etc. Every year, people buy from Nanyang and Huaiyang. Before and after the Spring Festival, glutinous rice flour used for making and selling Yuanxiao must be ground with a stone and then sieved with a fine sieve. In addition to the general materials, the stuffing of Yuanxiao is also mixed with honey, walnut kernel, black sesame and so on, which makes people taste fragrant after eating, and the made Yuanxiao is often in short supply. In short, in order to ensure the quality, Hesheng Stack has really spared no expense, so customers are often crowded, and it is even more crowded in the "three festivals".

In the early 1920s, Northern Warlord Wu entered Luoyang, and the market was once prosperous. The cooking wine brewed by Heshengzhan and his peers is even more popular. Cooking wine is made of glutinous rice and Luohe, so it is also called "Luohe". It was originally used as a condiment, but at that time, the military and political circles replaced Shaoxing wine and drank it in large quantities at public and private banquets. Rotten eggs made from distiller's grains are delicious and meaningful. They are the best table wine and one of Luoyang's famous specialties. It's hard to buy them in the market today.

After the early years of the Republic of China, Zhang Dingcen has been working as a shopkeeper in Hesheng Bookstore. He stands at the door every day to greet customers and always greets acquaintances. When the shop is busy, he also helps the clerk bundle snacks and so on. There are two accountants on the counter, who are responsible for business and going out to handle affairs; In addition, there are two shop assistants and two apprentices. In addition to maintaining business, they have to do some chores such as carrying, sweeping the floor and delivering meals. The pastry shop has 1 master, 2 workers and 1 apprentice. Kimchi workshop has 1 master and 2 apprentices. And 1 chef. Although these people have a division of labor, they can be transferred back and forth when they are busy and can help each other. At that time, the record of the wage system in the store was not clear. Probably the annual salary system. Usually you need to borrow money to keep accounts and settle accounts at the end of the year.

Four brothers, Zhang Dingcen. They respect each other, live in harmony and contribute to a big family together. Zhang Xiuzhai (1893— 1973) is the boss. He graduated from Henan Higher Business School. I worked as a clerk and clerk in my early years. Under normal circumstances, he doesn't ask much about the affairs of Taiwan stack, but he has repeatedly offered his own salary savings to support the operation of Taiwan stack. Zhang Xiuzhai lived in Kaifeng in his later years and was a famous local painter and calligrapher. Lao Sanzhang (1906- 1994) studied in Luoyang Agricultural School in his early years. Before the Anti-Japanese War, he took the examination for judicial personnel in Henan Province and was hired as a clerk and section chief of the police station. After the fall of Kaifeng, he returned to his hometown of Niewan Village in Luoyang to farm and run Taisheng Hengyoufang. At that time, the third son took care of the cattle work of four people in the family. He is the strong backing of Sheng Stark. Later, the third child retired as an employee of the Hopewell Station and died on 1994. The fourth son, Zhang Jilun, was born in 19 10 and now lives in Xinxiang. 1943 graduated from Chongqing army university, special phase VI, 1 year served as major general Gao Shen in the general office of the government military commission and chief of staff of the 30 th army major general. He is now a member of Luoyang CPPCC. Before the founding of New China, Zhang Jilun went out for many years and rarely asked about Hesheng Stack. But in the old society, some people in the family worked in the army, which played a certain role in supporting the family from bullying.

After the founding of People's Republic of China (PRC), He Shengzhan participated in the socialist transformation. 1955, Heshengzhan developed from a joint venture of the whole industry to a public-private joint venture, and set up a Heshengzhan food factory, with Zhang Dingcen as the deputy director and a private representative; In the 1960s, Heshengzhan Food Factory was changed into Luoyang No.1 Food Factory and turned into an enterprise owned by the whole people.

After the Third Plenary Session of the Eleventh Central Committee, in order to meet the needs of the new situation, Luoyang No.1 Food Factory was renamed Heshengzhan Food Factory and its old name was restored. Zhang Naizhou (principal of Gu Xiang Primary School in Luogang City) said that he was also invited as a representative of the old lady's jihad to participate in the ceremony of restoring the Zhanlaoning.
