2 Education and scientific research

Over the past 20 years, Professor Deli Gersan has taught eight courses, including Machinery and Equipment of Food Factory, Fundamentals of Food Factory Design, Introduction to Food Science and Engineering, Principles and Equipment of Food Refrigeration, Food English, HACCP System, Packaging English and Food Structure and Characteristics. Editor-in-chief published the tenth five-year plan textbook "Introduction to Food Science and Engineering" for agricultural colleges and universities, and the Mongolian textbook "Processing of Animal Products" for national colleges and universities. Eight textbooks and monographs have been published, including dairy milking machine, meat and meat products processing technology, livestock health and shed (Mongolian), food science and processing principle, HACCP system, packaging technology, etc. He has successively completed 12 national and autonomous regional scientific research projects and obtained 8 registration certificates of scientific and technological achievements. Among them, the national natural science foundation project "Study on the degradation and synthesis mechanism of flavor substances in livestock muscle under ultra-high pressure" systematically studied the degradation of glycogen and ATP, the degradation of muscle protein, the synthesis of new aromatic substances and the change of muscle fiber microstructure under ultra-high pressure, and put forward the high-pressure regulation theory of muscle after slaughter, which reached the advanced level of similar research in the world and was the first in China. The research results of bioelectricity characteristics of ruminants at various stages after slaughter revealed the correlation between biochemical indexes and bioelectricity indexes, and put forward the theory of deep maturity of ruminants' muscles after slaughter, which has important guiding significance for meat processing industry. He has published more than 50 papers in academic journals and conferences at home and abroad, including 5 SCI papers and 5 EI papers.

Professor Deligelsang won two third prizes for scientific and technological progress in Inner Mongolia Autonomous Region, the second prize for teaching achievements in colleges and universities in Inner Mongolia Autonomous Region 1, the high-quality and efficient agricultural science and technology award of Hohhot Municipal People's Government 1, the enterprise science and technology innovation of Bameng Office 1, and the excellent award for poverty alleviation through science and technology of Guyang County People's Government 1.
