Ziji handmade noodles

1. Add salt and an egg to the flour.

2. Mix the dough with clear water, which is harder than that of jiaozi, and cover it for 10 minute.

3. Knead the dough smooth and roll it thin with a rolling pin.

4. Sprinkle some dry flour evenly on the dough, and put a rolling pin on one end of the dough to roll the dough.

5. Continue rolling, then open, spread with dry flour, roll up from the other end, and repeat several times until the dough is rolled to about1mm.

6. Roll the dough to a suitable thickness and sprinkle some dry flour.

7. Fold up layer by layer

9. Shake off the cut noodles by hand.
