According to the relevant provisions of China's Food Hygiene Law, people engaged in food production and operation are required to have a physical examination. After passing the physical examination, you can take part in the work only after obtaining a health certificate. In other words, the first step to obtain a health certificate is a physical examination. Experience should generally be carried out in the health department at or above the county level, and the physical examination contents include: heart, lung, abdomen, liver, skin, bacterial examination, hepatitis B vaccination, etc.
People suffering from diseases, especially infectious diseases of digestive tract such as typhoid fever and viral hepatitis, active pulmonary tuberculosis, purulent or exudative skin diseases and other diseases that hinder food hygiene, cannot engage in catering work. It should be noted that, in order to ensure the accuracy of the physical examination results, the health department requires the medical examiner to "selectively eat" the day before the physical examination, not to eat high food in protein, and to have an empty stomach and drink less water on the morning of the physical examination. Before accepting the application for "Hygiene Permit", the health supervision department will send someone to conduct a comprehensive inspection on the hardware facilities of the restaurant, mainly to conduct a hygiene inspection on the location and design of the restaurant's demolition, expansion and decoration to see if it meets the health and safety requirements. For example, there should be no pollution sources (such as toilets, cesspits, garbage dumps, sewage ditches and ponds, factories that emit toxic and harmful gases, etc.) within 20-50 meters around the restaurant. It is also required that the ratio of the kitchen to the entrance of the hall is 1: 1, and it is necessary to participate in the project acceptance inspection and disinfection equipment. If the operator is a contracted or leased restaurant, the sanitary facilities should be inspected. There are also relevant requirements when filling out the application form. It is generally required to fill in the application form with a brush or pen, preferably with a carbon pen. The handwriting is neat and standard and cannot be altered. In the column of application materials and confidentiality requirements, the equipment, layout and process flow chart should be clearly filled in, and the layout of facilities should be described in detail in words. The technological process should be illustrated in the form of charts, from raw material processing to dining table. The column of "sanitary facilities" shall truthfully fill in the number and types of cleaning facilities owned, and other items such as "opinions of the competent department", "date of receiving the application", "opinions of the handling supervisor" and "projects approved by the health supervision institution" shall be filled in by the health supervision institution.
When filling in the application form, the following materials should also be submitted: approval letter for health examination of construction project design, approval letter for health acceptance of completion, equipment layout and process flow chart, raw material formula, use standard, approval certificate for special designated varieties, qualification certificate for health inspection and training of employees and health facilities, etc.
When applying for a certificate, employees sometimes need to attend training in health, laws and regulations.
