For noodles, the producer puts the mixed buckwheat noodles and sorghum noodles (mostly wheat noodles now) on a bed with a bed (a noodle-making tool with holes), sits on a lever and directly squeezes the noodles into long strips and cooks them in a pot.
This traditional and unique way of making food began in the Han and Tang Dynasties, flourished in the Ming and Qing Dynasties, and has continued to this day, becoming a unique flavor in northern China.
