4. Stir the dumpling stuffing in one direction with chopsticks until it is loaded.
5. Put 120g wheat flour and 1 yolk into a bowl, gradually add cold water, and stir until the batter is slightly thick, but it can naturally fall when picked up with chopsticks.
6. Peel the lotus root and cut it into small pieces of 0.5cm, but the first cut is not needed (about 1cm- 1.5cm from the bottom), and the second cut is necessary, so as to make a lotus root clip connected together.
7. After measuring the internal and external symmetry of lotus root clip, dye it with dry wheat flour.
8. Put jiaozi into the lotus root folder with chopsticks.
9. After filling, gently clamp the lotus root clip and remove the excess dumpling stuffing. After the lotus root is stuffed with dumpling stuffing, put it on a plate for later use.
10. First roll the lotus root clip into the batter.
1 1. Heat the oil with the volume of 1/3- 1/2 in a small milk pot, and then put it into the pot for frying when the oil is 70% to 80% hot.
12. fry with slow fire for 5 minutes, then fry with strong fire for 2 minutes, and drain the oil after the lotus root clip turns golden yellow.

4. The softening time of frying oil must be well controlled, and the color change of lotus root box should be observed during this period.
5. You can also sprinkle some spicy food on the fried lotus root box, or dip it in some spicy food or ketchup.
