What is the Yangtze sturgeon?
White sturgeon (scientific name: Psephurus gladius): 2-3 meters long, 200-300 kilograms in weight, and the maximum length can reach 7.5 meters. Also known as China white sturgeon, it belongs to the family Polyodontidae with the white sturgeon living in Mississippi River. Also known as China swordfish, it is the largest freshwater fish in China. Because its kiss is like a trunk, it is also commonly known as fish.

In ancient China, the white sturgeon was called tuna. Spring spawns against the current. It is mainly produced in Yibin, the main tributary of the Yangtze River in China, and also distributed in Qiantang River and the lower reaches of the Yellow River.
