In many countries, cardiovascular and cerebrovascular diseases caused by arteriosclerosis are listed as the leading cause of death every year. Among many factors leading to arteriosclerosis, such as hyperlipidemia, hypertension, obesity, lack of exercise, mental stress, smoking, endocrine and vitamin imbalance, eating more animal fat is the main factor. The investigation popularized dozens of temples in Taiwan Province Province and Taipei City, and it took more than two years to visit 49 temples in the whole province. There were 394 people in the survey, and their vegetarian time ranged from 1 year to 72 years. The average blood protein of non-vegetarians is 6.1-1g, while that of vegetarians is 6.6-8.8 g ... It is also confirmed that the blood protein of vegetarians is completely normal, which is more peaceful and stable than that of non-vegetarians.
First of all, is the vegetarian's daily food nutrition suitable for modern nutrition standards? The survey results show that the total calories, fat, sugar, phosphorus, vitamins A and C all exceed the standard amount. Protein, calcium, iron, vitamin B and nicotinic acid are below the standard, but even non-vegetarian people in China have a similar tendency. This is closely related to the food quality and hobbies of China people, and it is not unique to vegetarians. In the further analysis of blood and urine components of vegetarians and non-vegetarians, it is found that the total protein quality of vegetarians and non-vegetarians is very close to various protein qualities. In addition, the components such as urea nitrogen, creatine liver and uric acid of vegetarians are also within the normal range. These results show that, although vegetarians and non-vegetarians have different intake of protein, there is little difference in various protein in their blood, and the quality of serum protein of long-term vegetarians is not worse than that of non-vegetarians.

The results clearly proved that the number of vegetarians suffering from arteriosclerosis was very small, and the degree was relatively mild. In the investigation, they also found a very special result, that is, not only few long-term vegetarians suffer from arteriosclerosis, but also many people's fundus vein dilation is a phenomenon of low blood pressure, which is not so common among ordinary non-vegetarians in China, which is another powerful proof that long-term vegetarians suffer from arteriosclerosis. However, if you don't eat animal food for a long time, will it lead to anemia? Professor Chen also proved this problem in many ways. From the examination of the number of red blood cells and hemoglobin related to anemia in blood components, it is found that the average value of vegetarians is very close to that of non-vegetarians, and the anemia rate is generally not higher than that of non-vegetarians. People usually think that vegetarians have a slightly yellow skin color, but this is not caused by anemia.
Vitamin B is an indispensable component of hematopoiesis, and its supply is usually mainly animal food. From plant foods, humans rarely get the vitamin B they need. Therefore, in theory, if people don't eat animal food, vitamin B deficiency will occur, which may lead to megaloblastic anemia. However, in the survey, vegetarians were not found to have this symptom, although 70% of them had reduced vitamin B in their blood.
