Personally, I think two are good. If there is too little content to write two, there is only one. Another thing to note is that if the second resume only takes up a quarter of the paper, it is best to simplify it into one. The interviewer doesn't like that there is only a little content on the second resume, and will think that you want to see two codewords. In this case, it is best to use one.
