The Origin of Shanxi Daoxiao Noodles
It was founded by Chai Shao, a Xu-ma in Tang Dynasty. At that time, Chai Shao went to Chang 'an from his hometown and had lunch in a small shop. The shopkeeper is an old woman. The old woman's family is very poor, and there is nothing to eat, only noodles and good dough. Chai Shao asked the old woman to slice the dough, boil it in boiling water, pour the marinade and add some seasoning to make it sour, sweet, soft and strong. Later, people called this kind of food Daoxiao Noodles.
