You must go to Jiageng Park to go to Jimei University. There are Jimei Liberation Monument and Chen Jiageng Memorial Hall inscribed by Chairman Mao in the park. There is nothing to see, only the new campus, but just some buildings and Woods. You can also visit the Garden Expo Park by the way, but it's not in Jimei University, it's a park-style attraction.
