1. Dry-cured tofu
Dried bean curd is a vegetarian dish in pot-stewed vegetables. Dried marinated bean curd is an old bean curd, which is cooked with seasoning and sliced before cooking. In many places, people usually slice dried marinated tofu, and then add pepper, pork and seasoning to fry it.
The practice of marinating tofu;
1, buy old tofu and wash it, then water it for later use.
2. Pour100g refined salt into the soup pot, wrap the diced ginger and cinnamon with gauze, add soy sauce, chives and monosodium glutamate to make brine, and bring to a boil.
3. Put the old tofu into the soup pot, turn off the fire and soak for 1-2 hours. Take it out and dry it after coloring.
4. Dry the water, slice, add pepper, cooking oil and seasoning, stir-fry and serve.
