Sesame oil should have its unique rich fragrance, light yellow and slightly dark red in color, translucent, bubble-free, and non-layered.

If the smell of sesame oil is mixed with other smells, such as musty and spicy, it means that the oil has deteriorated and is not suitable for eating; If the color is too dark, dark brown, it means there are impurities; If there are layers in the oil and there are a lot of bubbles in the oscillation, it means that water is mixed in the oil; If there is no fragrance of sesame oil, it means it is fake sesame oil.

The identification of its true and false sesame oil is as follows:

1 Identification method of sesame oil: Generally, high-grade oil is light in color and low-grade oil is dark in color (except sesame oil); Good transparency, no turbidity; No precipitation and suspended matter, low viscosity; There is no stratification (if there is stratification, it is likely to be adulterated mixed oil, sesame oil is more adulterated); It has a normal unique smell, but it has no sour taste and odor.

2 storage method: reasonable selection of storage containers. Ceramic cylinders can be used when there is more oil, and opaque dark glass bottles can be used when there is less oil, so as to minimize the diameter of the container. After the oil is filled, seal the bottle mouth to isolate the oil from the air and prevent the oxidation of edible oil. Store the container in a cool, dark, dry and low temperature place.

3 color identification method: pure sesame oil is red or orange-red, machine-pressed sesame oil is lighter than ground sesame oil, rapeseed oil is dark yellow in sesame oil and cottonseed oil is dark red.

Test water method: Dip a drop of fragrant oil in the calm and cold water with chopsticks, and the pure fragrant oil will present a colorless and transparent thin oil flower. The flowers adulterated with sesame oil are small and thick, and it is not easy to spread. [2] It has been proved that when pure sesame oil and blended oil are distinguished by this method, the water temperature plays a decisive role and cold water cannot be separated. Both kinds of warm water are loose, but the shape and size of oil flowers are different.

5 sniffing method: the fragrance of ground sesame oil is mellow, rich and unique. If peanut oil, soybean oil, refined oil and rapeseed oil are mixed, it will not only have a bad smell, but also have other smells such as peanut and bean smell. Some sesame oil is blended with edible essence and has a poor sense of smell.

Sesame essence and salad oil are simply blended according to the ratio of 1: 1000, so that the "sesame oil" produced in this way is less than 3 yuan per catty, while the real sesame oil price is at least 12 yuan per catty. How to tell the authenticity of sesame oil? The easiest way is to put sesame oil in the refrigerator and freeze it to MINUS 10 degrees. Pure sesame oil is liquid, fake sesame oil will coagulate, and ordinary small sesame oil will be slightly burnt. At the same time, try to buy brand-name products under high humidity.

Consumers can also identify sesame oil from the following aspects:

A look at the color: pure sesame oil is reddish or reddish with yellow. If mixed with other oils, the color will be different. Rapeseed oil is dark yellow and cottonseed oil is dark red. For products mixed with other vegetable oils, you can also use the water testing method: dip a drop of fragrant oil on the calm water with chopsticks, and pure sesame oil will appear colorless and transparent fine oil flowers, while adulterated oil will appear thicker and smaller oil flowers.

Second, look at transparency: generally good quality sesame oil has good transparency and is not turbid.

Third, looking for sediment: good quality, no sediment and suspended matter, low viscosity.

Fourth, see if there is stratification: sesame oil is quite sensitive to temperature, and it may be stratified at low temperature. If there is stratification at room temperature, the viscosity does not increase obviously at 0℃ (the national standard storage at 0℃ is 5.5, and it is qualified if it is not frozen), it is probably adulterated mixed oil. If there is no stratification at any temperature, it means that antifreeze additives have been added to sesame oil.

Five checks: check the trademark carefully, pay attention to the shelf life and delivery date, and be especially vigilant if there is no factory name, address and quality standard code. Pay special attention to its raw materials or ingredients (especially small words, written).

Sixth, look at the price: refer to the price of sesame. Generally, 2.5~3 Jin of sesame gives one Jin of sesame oil. The price is too low, obviously it is fake sesame oil blended with essence!

Brand sesame oil should look for trademarks and anti-counterfeiting marks. Secondly, look at the texture and color of the oil. When buying, turn the bottle back and forth to see the density, color and precipitation. In addition, I prefer to buy sesame oil from the countryside. The quality of sesame oil in Hengshui, Hebei Province is good, and the price of sesame oil in the market will not be high.
