Whether fresh corn tastes good or not depends on temperature and moisture if it is preserved. Generally speaking, the safe moisture content (below 13%) should not be stored at room temperature for more than 3 years, and aging may occur after 3-5 years. Nowadays, green grain storage is popularized, and the safe moisture content should be controlled below 20 degrees, and some of them can be stored with nitrogen to prolong the storage time.
Aging corn is not suitable for human consumption because of its high fatty acid and low viscosity. But it can be brewed and used as feed grain.
