Composition:
Ingredients: 2500g of white radish, 30g of salt, 500g of soy sauce, 300g of aged vinegar, 80g of sugar and 25g of garlic.
Accessories: appropriate amount of fragrant leaves and star anise.
Steps:
1. Get all the materials ready.
2. Wash the white radish and cut into pieces.
3. Add salt, mix the salt and radish by hand and marinate for 30 minutes.
After 4.30 minutes, pour out the pickled water and rinse it with clear water.
5. Add Jamlom sugar, stir evenly by hand, and marinate for 15 minutes.
6. Pour out the soaked radish water, rinse it with clear water, then rinse it with cold boiled water, and then drain the water for later use.
7. Put the remaining sugar into the pot and add soy sauce, fragrant leaves and star anise.
8. Remove the garlic skin and cut into pieces.
9. Bring the fire to a boil, turn off the fire and let it cool for later use.
10. Add garlic slices and mature vinegar to the cooled soy sauce.
