I always feel that Henan people's imagination of food is not rich: except for noodle soup, just like cooking mala Tang, it makes your mouth feel vaguely warm in specious, and your stomach is only full of water, and there is nothing special about it.

There is only one kind of Henan cuisine I like very much: mutton Huimian Noodles. Shanxi and Shaanxi are famous for their pasta, but I don't know why mutton Huimian Noodles is popularized by Henan people.

In a big bowl where you can almost put your head in, there are layers of noodles three centimeters wide, which can be comparable to the belt noodles in Shaanxi. Giant mutton is either floating or buried in the noodles, and then poured with thick white mutton soup.

When eating mutton Huimian Noodles, be sure to open your mouth wide, so that the long and wide noodles can be filled with large pieces of mutton. In the scalding mouth, the delicious mutton is stirred in the smoothness of the noodles, so that the tongue, teeth and nose can feel the delicious and warm beauty at the same time.

I searched all the streets of Shenzhen, but unfortunately I found that there were few restaurants in Henan. Many years ago, I ate authentic mutton Huimian Noodles in a food stall on Erqi Road in Zhengzhou, and I couldn't eat it for the second time in Shenzhen for a long time.

A few years ago, I came to Binhe Road in Shenzhen by accident. Next to the former Xiangjiang Furniture City, I found a very humble restaurant. Its dusty signboard reads "Huimian Noodles Restaurant of Henan Mutton", without any design or differentiated VI-related words and logos.

The Huimian Noodles Pavilion of Lamb is only a dozen square meters, with little decoration. Shopkeepers in untidy clothes sat at the table yawning and ignored the diners.

I tried to order a bowl of mutton, Huimian Noodles. I didn't expect this bowl of noodles to be delicious, beautiful, warm and authentic. It reminds me of all the good memories of mutton and Huimian Noodles, and makes me miss it to this day.

Later, I found a new Kaifeng-style restaurant in Fahua North Road, where there are many delicious foods. It's not surprising that the storefronts there are still not neat enough: all Henan restaurants in Shenzhen don't pay attention to the neatness of form, and there are few windows in the shops. It seems that people in Henan are more willing to sweep the world than the house. Fortunately, the decoration of this Kaifeng restaurant is a rare hardcover version in Henan restaurants.

So, with the feeling of discovering the new continent, I went with a friend in high spirits. I didn't eat the emblem there. I only ate mutton offal soup. Unfortunately, I found that the soup was cold and greasy and stuck in my stomach. I broke out in a cold sweat when I drank soup.

What's more, the waiters in this restaurant are lazy, and there is always a time difference of several minutes in responding to every request. The table there is as greasy and cold as their mutton soup. The so-called "pot helmet" they made by imitating Shaanxi flavor is actually just a little bit of thickened dead bread, which makes me angry at its piracy after living in Shaanxi for many years.

The small shop on Binhe Road is too far away. Although the emblem is delicious, I have never been there again, and now I doubt its existence. Although the Kaifeng restaurant on Fahua North Road is close at hand, I never want to go back because of my first unpleasant dining experience.

Therefore, Hui Mian, a kind of Henan mutton with thick soup and tender meat, can only be embedded in my memory most of the time. The delicacy of sheep is lonely.
