Japanese udon noodles (with kelp and bonito sauce)

Boiled udon noodles with kelp bonito sauce, sweet and delicious, serving for 2 people, and eating half the ingredients for a single person.

Materials?

Kumbu 20g

30 grams of bonito.

2 tablespoons Japanese light soy sauce (the size of a porcelain spoon for soup and porridge)

Lin Wei 1 spoon

Japanese wine 1 spoon

Wulong noodles 2 Bao

2 rapeseed trees

4 mushrooms

Put the water for noodle soup base into the pot, and the water should be at room temperature. Add kelp and soak for 30 minutes, then take out kelp.

Take another pot, add water to boil, wash the rape and cut into pieces, blanch with boiling water for 30s, and then put the rape into a cold water basin to cool.

Cut the mushrooms into small pieces, put them in boiled water that has been blanched with rapeseed, add the soaked kelp, just two small pieces, add a little soy sauce and cook until the mushrooms are cooked. Remove the mushrooms and throw away the rest.

Put the cooked soup base in a pot, boil it, add udon noodles and cook for three minutes, then add two tablespoons of soy sauce, one tablespoon of Lin Hui and one tablespoon of Japanese wine, and cook for 1 minute, then turn off the heat. (Soy sauce: miso: Japanese wine is 2: 1: 1).

It must be light soy sauce. Sushi dipped in soy sauce belongs to thick soy sauce, which will mask the umami taste of bonito, so use light soy sauce.
