In the past, northerners liked jiaozi very much, but with the improvement of modern living standards, many southerners in Renye Fang prefer jiaozi, and jiaozi has become an important symbol of China's traditional culture. Especially in some important festivals, every family will eat jiaozi, and jiaozi symbolizes reunion and a wonderful year. But when you eat jiaozi, you need a dipping dish. Is this dip vinegar or soy sauce?
This is not a question with absolute answer. This depends on everyone's regional life and personal preferences. For example, people in Northeast China like to eat jiaozi dipped in soy sauce, or a mixture of soy sauce and vinegar. The vinegar must be aged vinegar. Shanghainese living in the south usually wrap jiaozi in vinegar and rice vinegar.
Then why do we usually eat jiaozi dipped in vinegar? It is generally believed that vinegar can help us digest. Because we usually eat jiaozi with meat stuffing, and the dumpling skin is not easy to digest. As an acidic food, vinegar can effectively enhance the peristalsis of the stomach, supplement the deficiency of gastric acid and promote the digestion of the human body. Secondly, in terms of chemical reaction, because dough is acidic and meat is acidic, vinegar is actually an alkali although it is an acidic food. Jiaozi dipped in vinegar can balance acid and alkali. In addition, because jiaozi dipped in vinegar is delicious.
So when you eat jiaozi, should you use aged vinegar or balsamic vinegar?
1. First of all, judging from the degree of jealousy, if you are jealous, especially jealous, then it is recommended to use aged vinegar. If you can only eat sour, it is recommended to use balsamic vinegar.
2. According to jiaozi's stuffing. If you eat cabbage, jiaozi, eggs and jiaozi, ordinary balsamic vinegar will do; If you eat mutton jiaozi or catfish jiaozi, then vinegar is more suitable.
3. Mainly according to the taste of dumpling stuffing. The stronger the flavor of dumpling stuffing, we generally recommend using aged vinegar. If the dumpling stuffing tastes particularly weak, balsamic vinegar or no vinegar is excellent.
4. From the perspective of ingredients, if it is only dipped in vinegar, aged vinegar and fragrant vinegar can be used. If you mix garlic paste with Chili oil, you must use mature vinegar, so that the taste can reach the ultimate delicious.
