Xinjiang fried rice noodles were invented in Guizhou. 1982, Guizhou people Wen Zhongfu and Zhuo, who worked in Urumqi October Tractor Factory, combined Guizhou rice noodles with Xinjiang mixed noodles and fried noodles to develop original fried rice noodles. 1986 opened the first "southern rice noodle restaurant" specializing in Xinjiang fried rice noodles. This southern rice noodle shop also took the first step for Xinjiang fried rice noodles to really get out of the circle, and later became half of Xinjiang fried rice noodles. Xinjiang fried rice noodles are the famous local snacks in Xinjiang. The rice noodles used for fried rice noodles are thick and chewy, with spicy taste and rich soup color. And there are many varieties, including fried rice noodles with chicken, fried rice noodles with beef, fried rice noodles with mushrooms, fried rice noodles with ham and fried rice noodles with vegetarian dishes.
