Microwave ovens can effectively destroy aflatoxin (AFT). In Japan, there is an experiment-based paper "Decontamination of Aflatoxin in Food by Microwave Oven". The results show that ordinary household microwave oven can effectively reduce the amount of aflatoxin (mainly B 1 post) attached to peanuts.

In short, peanuts contaminated by aflatoxin were ground, divided into several parts, put into the culture medium, covered with a glass cover, and placed in a microwave oven with medium fire for 1, 3, 5 and 7 minutes, and the reduction of aflatoxin was measured and recorded respectively. The final comprehensive results are: 3.94%, 23.8%, 44.94% and 7 1.44.

According to the results of peanut experiment, the longer exposure time of aflatoxin in microwave oven, the better its destruction effect. But at the same time, the paper also points out that peanut crumbs are easy to burn when they absorb heat for a long time in the microwave oven.

At the end of the experiment, the author also conducted an experiment in which peanuts and peppers contaminated with aflatoxin were exposed to the sun for 8 hours every day. The results are as follows:

From the results of peanut and pepper exposed to sunlight, it can be seen that after two days of experiments, the residual aflatoxin on the surface is greatly reduced. According to the test results of peanuts, the residue of aflatoxin has dropped to 42.7% after 4 days.

But in our opinion, the method of sun exposure is time-consuming and laborious to implement in real life. On the one hand, it is not every day, on the other hand, the whole implementation cycle is time-consuming. Compare the efficiency of microwave oven and judge the level. However, in daily life, it is difficult to completely remove aflatoxin from grain by microwave oven or natural light irradiation. However, based on the above experimental results and life experience, we can still combine various measures to avoid taking too much aflatoxin. For moldy foods, such as cereals and beans, we should take measures before eating, for example,

1. After buying it, eat it as soon as possible. If it needs to be stored for a long time, it should be dried in the sun (generally, when the water content is lower than 12%, Aspergillus flavus cannot reproduce). Ultraviolet rays in sunlight can also kill mold and destroy a certain amount of aflatoxin;

2. It is necessary to comprehensively and carefully screen out the particles with bad appearance, and anything that is damaged, wrinkled, abnormal in color and smell is inedible;

3. If possible, kill aflatoxin with microwave oven;
