The traditional beer fermentation process can be divided into two categories: lower fermentation and upper fermentation. The yeast used in the two processes is different, so the fermentation process, equipment and conditions are also different, which leads to different beer flavors. Generally, it takes a long time to ferment from below; Fermentation from above is faster, but the storage time of beer is shorter. In recent years, on the basis of scientific research, we have a deeper understanding of the mechanism of beer fermentation and improved the fermentation technology. Using the "one pot method", we simplified the production process, and the prophase and anaphase of fermentation were no longer strictly divided. The production time is shortened. This not only reduces the production cost, but also reduces the loss of beer in the production process, and achieves cost savings by reducing labor and cleaning costs. However, a new technology needs the support of advanced equipment. Conical tank is a new equipment with large capacity, which is widely used. It has the advantages of low investment cost, improving workers' working conditions and being suitable for mass production. While ensuring the quality of beer, it can also meet the needs of rapid fermentation.
