All the sugar melted and tiny bubbles began to appear on the surface of the syrup. At this time, turn off the fire and put the pot in a cool place (because the temperature of sugar is extremely high, the residual temperature will keep the syrup overflowing).
Note: this time needs to be well controlled, and the fire can only be turned off early, not late. At most, the sugar is not burned enough, and the syrup erupts like a volcano in the later stage. Be sure to pay attention to safety and don't leave the stove.

When the syrup temperature is slightly cool (about 10 minute), add 1000 ml of water to the pot. Attention? Never add water just after turning off the fire, or your kitchen will explode and syrup will be sprayed everywhere. Pour it slowly when adding water.

Add the remaining 2/3 sugar.

You can't cover the pot when cooking, because sugar easily overflows the pot, and it won't overflow without covering it. Moreover, this process also needs to evaporate some water vapor to make the syrup more viscous. Caramel will be made in one hour and must be completely cooled before it can be put into a container for storage. Hot syrup doesn't look sticky, but it becomes sticky when it is cold.
